Carob Pecan Cake
1 cup whole wheat flour 1/4 cup carob powder 1/2 teaspoon baking powder 1/4 teaspoon baking soda 1/8 teaspoon salt 1/4 cup canola oil or butter or combination 1/2 teaspoon liquid stevia 1 egg 1/2 teaspoon vanilla 1/4 teaspoon almond extract (optional) 1/2 cup plain yogurt 1/2 cup chopped pecans Mix together the dry ingredients. Mix together the wet ingredients and the pecans. Mix the dry ingredients into the wet ingredients. Batter will be thick. Spread batter into an oiled 8x8" baking pan. Bake at 350 degrees for 20 minutes.
This is a dense cake. I eat it unfrosted, but you may frost it with the frosting of your choice.
