2 Tablespoons cornstarch (or Arrowroot powder for gluten free) 2 1/2 Tablespoons carob powder 2 cups milk 1/8 teaspoon liquid stevia (about 20 drops) 1/4 teaspoon peppermint, almond, or vanilla extract for flavoring, if desired
In a medium saucepan mix together the cornstarch and carob powder. Add a small amount of milk and mix until well blended. Add the remaining milk, stevia, and flavoring, if being used, and mix well. Place the pan on a burner on medium heat and stir until the mixture starts to boil. Turn the temperature to simmer and cook for 5 more minutes, stirring constantly. The cooking process takes about 25 minutes on my stove. Remove pan from heat and pour pudding into a bowl to cool. When cool, cover and refrigerate until ready to serve. It makes 4 1/2cup servings.
