Norm's stevia blueberry muffins (recipe #1)

- 1-1/2 Cups Wholemeal Flour
- 1/4 Cup Almond Meal
- 2 Tbsp STEVIA
- 1/2 Cup Rolled Oats
- 1/4 Tsp Salt
- 1 Tsp Baking Soda
- 1/2 Tsp Nutmeg
- 1/2 Tsp Cinnamon
- 180Mil Pineapple Juice
- 1/4 Cup Oil
- 1 Egg
- 1 Tsp Vanilla Essence
- 1/2 Cup Plain Yoghurt
- 60Mil Milk
- 1x425G Tin Blueberries (drained)or 1 Cup of fresh if available.

In small bowl soak oats in the pineapple juice 15mins. Beat together oil,egg & vanilla. Thin yoghurt with milk & add to liquid ingredients. Mix in the soaked oats. Mix together flour, baking soda, salt & STEVIA. Fold the dry ingredients into the wet, stirring as little as possible. Fold in the Blueberries just before flour is completely blended. Spoon mix into greased 12 hole muffin pan & cook 25mins.at190deg celcius (fan forced oven)Makes 12...

1-1/2 C Wholemeal Flour 180 Ml Pineapple Juice
1/4 C Almond Meal 1/4 C Oil
2 Tbsp STEVIA 1 Egg
1/2 C Rolled Oats 1Tsp Vanilla
1/4 Tsp Salt 1/2 Cup Plain Yoghurt
1 Tsp Baking Soda (Bi-Carb) 60Ml Milk
1/2 Tsp Nutmeg 1x425G Tin Blueberries drained
1/2 Tsp Cinnamon or 1 C Fresh Ones

Soak oats in pineapple juice 15mins.,beat together oil egg & vanilla essence,thin yoghurt with milk & add to other liquid ingredients, beat , mix in the soaked oats. Mix flour, baking soda, salt & STEVIA
fold dry ingredients into the wet stirring as little as possible. Fold in the Blueberries just before flour is completely blended. Spoon into 12 hole greased muffin pan. Cook 25 mins (Fan forced oven) Can be wrapped individually later & frozen to be reheated at another time in the microwave for 30secs. Makes 12 Muffins...
