On again, off and back on again with my love for stevia

I have a life long allergy problem that manifests itself in dry itchy skin. When My oldest daughter inherited allergies plus asthma, I began my search for a solution for her and me. I took her to a Doctor who believed in natural food being the best cure.
He told me that he did not have time to educate me, but gave me a list of healthy eating books & i began my adventure. It has been a growing experience from then until today. I seldom have any more itchy attacks but now when I over do sweet things which I love & once I start I cannot stop until they are gone.
Then my blood sugar drops & i become drowsy or fall asleep on the spot. I think I started experimenting with Stevia about 3 years ago when I was looking for a sweet treat that I could eat when I was with family or friends who have no problem over eating sweets. Then I stopped using Stevia when doing reading about the dangers of Stevia and lack of motivation set in.
Then one day I picked up a little cook book called Plan D by Dee McCaffery which I devoured in one sitting. And the love affair was on again. Recently eating 3 to 4 times with non sugar challenged friends has been an increasing challenge for me.
Last Friday 8/19/11 I made my Fathers Aunt Pearls Banana Bread using Coconut/Almond meal plus Stevia to replace the sugar. It baked nicely but was very dry and crumbly. So this Friday 8/26/11 I was on the internet looking for a Stevia sweetened Banana Nut Cake recipe to try. I ran across your web site which appealed to me with its straight forward simplicity & easy read.
I had all the main ingredients for the banana bread. I baked it even though it made my home extra warm. It came out moist, tender and pleasantly sweet. My friends gave it a 3 star rateing last weeks got zero.
