Sweet Spiced Potato with Chocolate Dipping Sauce and Stevia

Sweet Spiced Potato with Chocolate Dipping Sauce and Stevia
For the Sweet Spiced Potato:
* 2 teaspoons of mixed spice
* 1 teaspoon of coconut oil (I recommend using this but it’s not necessary)
* 1 orange sweet potato
* 1 purple sweet potato
(you could use 2 of the same colour, or pumpkin also)
Pre-heat oven to 180 degrees Celsius. Wash and cut the sweet potato into rounds about 1cm thick. Mix the rounds in a bowl with the coconut oil (warmed so it’s liquid) and the mixed spice. Toss until evenly coated. Place the rounds onto a tray lined with parchment paper and bake until just golden brown and soft through.
For the Chocolate Dipping Sauce:
* 1/2 large avocado or 1 small
* 2/3 cup of water (you could sub this with fresh raw nut or seed milk for something extra creamy)
* 1 tablespoon of cocoa powder or raw cacao powder (you could sub with carob powder also. I used a mix of both)
* Stevia to taste
While the sweet potato is baking, put the chocolate sauce ingredients into a blender and blend for 1-2 minutes until creamy. Serve with the sweet potato rounds and enjoy as a dipping sauce, or spoon onto the rounds.
